I went to a seminar yesterday hosted by Market District & Jessica Dugan the wonderful dietitian. I want to share a few things I learned from her.
Veggies & Fruits that are in season right now: Corn, lettuce, watermelon, strawberries, cantaloupe, cherries, blueberries, peaches, apricots. You can also purchase them frozen and receive the same amount of nutrients.
Tips on getting more antioxidants:
- Eat a rainbow of fruits and vegetables. The colors of fruits and vegetables are clues about the types of nutrients they provide. To get a variety of nutrients, eat the variety of colors.
- Be adventurous in the product section:
* Chose a colorful fruit you have never tried (DRAGON FRUIT) in the best. It taste similar to a Kiwi.
* Pick a new fruit each time you shop
- Plan a least two dinners per week with beans as the main source of protein
- Experiment with fresh herbs and spices
- Chose whole grain products (brown rice and whole wheat pasta)
- Add nuts to your salad, soups and cereals
- Snack on fresh veggies with a hummus or bean dip
- Eat salsa as a snack with eggs
Ok after hearing all these great things on nutrition they made the best Veg-Tastic Veggie Burger. I can't wait to make it. Here is the recipe:
Prep time: 30 min
Cooking time: 12 min
Ingredients:
3/4 cup of uncooked quinoa
1.5 cups of water
1.4 cups of flax seed meal
1.4 cup of warm water
2 tbsp low sodium soy sauce
1.2 tsp black pepper
1 cup of onion (I will eliminate)
2 garlic gloves
15.5 oz of can chick peas
2 tbsp. plus 2 tsp canola oil
half cup of red bell peppers diced
1 cup of carrots
1.4 cup green onion diced
1.4 cilantro ( I couldn't even taste but I will leave this out)
I was so impressed with everything! Was the best veggie burger I had ever tasted.
